Greg Mathews played baseball at Santa Ana College in 1981 and 1982, appearing in a school-record 34 games while recording a school-record seven saves. In his first season as a Don, Mathews appeared in 17 games and finished 2-3 with three saves, recording 38 strikeouts in 69-innings pitched. He started six games in South Coast Conference play, finishing 1-3 with one save in 43.2 innings. 

During the 1982 season, Mathews finished with eight starts and four complete games in 17 appearances. He pitched a total of 70-2/3 innings, finishing with a 6-1 record, four saves, 44 strikeouts and a 3.20 ERA. Mathews was 3-1 with one save in South Coast Conference play that season, racking up 26 strikeouts while surrendering 15 walks. The Dons finished third in the conference in 1982 with a 27-9-1 record. Mathews was selected to the All-South Coast Conference First Team for his efforts. 

Mathews was drafted by the St. Louis Cardinals in 1982 and spent four years in St. Louis before playing one year with the Philadelphia Phillies. He finished with a career record of 28-33 with two 11-win seasons including a major league career-best 11-8 mark in 1986. Altogether, Mathews appeared in 93 games, finishing with four complete games, one shutout, 251 strikeouts and a 4.08 ERA. In 1987, Mathews became the first Santa Ana College graduate to pitch in the World Series (St. Louis Cardinals).
